How do you get the perfect boba sweetness and consistency?

BOBA PRO TIPS:

  • Do NOT wash or rinse boba before cooking. They must go from the package directly into boiling water.
  • You’ll need to use a lot of water when cooking boba. Not using enough water may cause them to not cook all the way, which we don’t want!
  • Cooked boba is best when made fresh. We make them multiple times a day to serve you fresh boba.
  • Please discard boba after 6 hours. Whatever you do, DO NOT put leftover boba in the fridge.

COOKING STEPS:

  1. Boil Water. Make sure there is a minimum of 7 parts water to 1 part boba.
  2. Add boba into boiling water. Make sure watering is at rolling boil before you add your boba.
  3. Stir lightly. Stir the boba while cooking so that it doesn’t stick to the pot. Stir often.
  4. Cook for 20 minutes on high heat. Maintain a rolling boil and stir every 5 minutes.
  5. Steep the cooked boba for 20 minutes.  After cooking for 20 minutes, take the pot off the heat and let sit for 20 minutes covered.
  6. Make Brown Sugar Syrup. While pearls are boiling, make simple syrup by combining 3 cup brown sugar and 1 cup water and boiling until dissolved. Set aside.
  7. Drain the boba and rinse under cold water. PLEASE DON’T BURN YOURSELF. Start rinsing when the boba have cooled. Aim for lukewarm, but not ice cold. This process helps retain the chewy texture and prevents your boba from getting too soft.
  8. Add boba to brown sugar syrup. Let it sit about 30 minutes so boba absorbed most of the sugar.
  9. Don’t forget to stir through out the process and after they are cooked keep stirring through out the day.
